Meat Sauce

  • 2 lbs organic meat (turkey, chicken or beef. Ideally grass fed if you can find it).
  • 2 tbpn olive oil
  • 7 carrots peeled and chopped
  • 4 celery stalks
  • 2 cloves of garlic
  • 1 yellow onion peeled and chopped
  • Thyme finely chopped
  • Oregano finely chopped
  • 1 bay leaf
  • 8 large tomatoes diced (be sure to keep all of the juices)
  • Sea salt and pepper to taste
  1. Heat olive oil in dutch oven on low
  2. Add onion and garlic and sauté until translucent
  3. Add carrot and celery and sauté for another 10 minutes
  4. Add the oregano and thyme
  5. Now add your meat and cook for 10 minutes (until meat is mostly cooked through)
  6. Add tomatoes, bay leaf, salt and pepper to taste
  7. Bring to a boil then reduce heat to simmer
  8. Leave simmering for a few hours until liquid reaches desired consistency
  9. Stir often to make sure the bottom does not burn
